Field Inspection
They aim to ensure the origin of the product. The fruit will come from parcels located in 8 towns in Navarra covered by the regulation.
To this end, conducts inspections of all parcels to apply for registration in the Register of Plantation.
Inspection of industries
They say the developmenst of the system corresponds faithfully preserves the specifications outlined in the Regulations.
Are inspected at various stages of development by controlling industries:
- That the handling of the fruit is without immersing them in water or chemical solutions.
- That the packaging has not added liquid.
- In addition to random samples are taken for further laboratory analysis.
The containers, thus manufactured, which have been monitored at all stages by the inspection body of the appellation, the label shall bear the logo and legend of the name, and the corresponding numbered label provided by the Control Board, so that identification leaves no room for doubt.
Physical-chemical

They assert that preserves meets the quality standard of canned vegetables, and responds to the characteristics of Lodosa Piquillo peppers.
Sensory Analysis
Make: Public University of Navarra
The designation makes the final product sensory analysis to determine the attributes that best describe the product and the optimal intensity of each of them.
Parameters that are evaluated
- Opening the package:
Odor, fruit number and uniformity of size and color. - Evaluation of appearance:
Cracks, apex, color, traces of skin thickness and remains of seeds - Mouthfeel:
Firmness, roughness of the flesh, flavor, acid taste, feeling hot and persistence of flavor.
